Bourbon Cream Corn
Ingredients:
- 2 cups smoked corn kernels
- 1 oz. oil
- 1 tbsp chopped garlic
- ½ tbsp lemon pepper
- 1 ½ oz. chicken stock
- 1 oz. whiskey
- ½ cup cream
- 1 tbsp chopped cilantro
- ½ cup Cotija or Parmesan cheese
Procedure:
- On a grill cook 5-6 ears of corn husk and all. (this can be done a day or two in advance)
- Cut the corn off the cob and with the back of the knife milk the cob by scraping it firmly
- Heat oil in a large sauté pan and add corn
- Add lemon pepper and garlic and sauté a 2-3 minutes
- Add chicken stock and cook down until the liquid has evaporated
- Flame with whiskey
- Add cream, cilantro, and reduce heat and simmer for 3-4 minutes
- Add cheese and stir for about a minute until it thickens
